  • 3 oz. tarragon, or
  • Estregan leaves
  • 1 qt. good white wine, or

Method

Strip the leaves from the branches of the estregan or tarragon about the last of August. Put into a quart fruit can and fill with the vinegar, close and let stand 20 days, then strain. Use for salads or sharp sauces.
