Make a syrup by boiling for ten minutes sugar and water in the proportion of two cups of water and one cup of sugar. Wipe, pare, quarter and core Porter apples. Add a small piece of stick cinnamon to syrup or a quince pared and cut in small pieces. Add apples and cook until just soft. Remove to jar, cover and seal.
