Select large Florida pineapples. Cut crosswise in thick slices, and then peel and core the pineapples. Chop or slice rather fine. Mix fruit and sugar. Let stand over night. Then add the cup of water to each quart of the fruit. Pour in preserving kettle, let come slowly to the boiling point, fill the hot cans to overflowing with the boiling fruit, put on clean rubbers and covers and seal at once.
