  • 1 pk. green tomatoes, sliced
  • 6 large onions, sliced
  • 1 cup salt
  • 1 qt. vinegar with 2 qts. water
  • 3 qts. vinegar
  • 2 lbs. brown sugar
  • 2 teaspoons each whole all-spice, stick cinnamon and cloves, heads removed
  • 4 tablespoons mustard seed
  • 6 green peppers, chopped fine


Sprinkle the salt over tomatoes and onions separately, place in thin bags over night to drain. Boil the quart of vinegar with the water, add tomatoes, and let boil 15 minutes. Drain and throw away the liquid.

Mix with the rest of the ingredients bring to a boil, scald thoroughly, put in jars and seal at once. Let cool gradually.
