  • ½ bu. very ripe tomatoes
  • 2 teaspoons ground cinnamon
  • teaspoon cayenne or red pepper
  • 2 tablespoons salt
  • 4 cups sugar
  • ¼ teaspoon ground mustard
  • 1 pint strong vinegar


Score the tomatoes with a knife and boil 2 hours, then strain. Add the dry ingredients and when nearly done or reduced one-half, add the vinegar. Bottle and seal.
