  • 1 peck ripe tomatoes
  • ½ cup sugar
  • 2 tablespoons salt
  • cups vinegar
  • ¼ tablespoon cayenne pepper
  • ¼ cup all together, of cassia buds, whole allspice and stick cinnamon


Wash and cut up the tomaties, add the salt and boil until soft. Strain well and let boil again slowly, 5 hours, or until very thick. Add sugar to vinegar. Tie spices in a bag and boil in the vinegar until well flavored, add to the tomato pulp and boil 15 minutes longer. Bottle while hot and seal.
