  • 1 peck ripe tomatoes
  • 4 onions
  • 1 small section of garlic


Boil first five ingredients until soft, strain through colander and then through sieve. Tie whole spices in bag. Add with the rest of the ingredients to strained tomatoes.

Boil slowly and steadily, several hours, until thick or reduced one-half. Remove spice bag, add 1 more cup vinegar, boil 10 minutes longer. Bottle while hot and seal.
