Ingredients

  • 50 medium ripe tomatoes
  • 10 medium onions
  • 4 red peppers, seeds removed
  • 1 large bunch of English celery (6 to 12 stalks)
  • 1 quart vinegar
  • 1 tablespoon whole allspice
  • 1 tablespoon whole cloves, heads, removed
  • 1 tablespoon whole cinnamon
  • 3 cups sugar
  • 2 tablespoons salt
  • 1 nutmeg, grated

Method

Scald, peel and chop the tomatoes, and put in colander to drain. Chop all the vegetables. Tie the whole spices in a bag.

Mix and then boil 2½ hours; fill into bottles while hot and seal air-tight.
