Beat the yolk of one egg, add one tablespoon sugar, and beat until light. Add ½ cup milk. Beat the white of the egg well and fold it in lightly. Add ½ teaspoon vanilla, a little grated nutmeg or 1 ½ tablespoons lemon juice.
