Ah, karari roti; I fell in love when I spotted this bread at my favorite restaurant in India, which I visit every time I travel there. It was love at first bite. They are large bowl-shaped crispy roti, welcoming with their lightly golden edges. This recipe is a breeze as it can be made up in a few simple steps. You’ll need a kadhai without a handle, or you can use a stainless steel mixing bowl (about 27cm/11in in diameter) as I do.
