Ingredients: 250 g/8¾ oz potatoes; 120 g/4¼ oz/½ cup black bengal gram/kala chana, dried, or 1 can of garbanzo beans, drained and rinsed; 1 tsp ground cumin; 1 small red onion, chopped; 1 tsp red chili powder; Salt; 2 small green chilies or 1 small Thai green chili (use less/more as per taste preference); 5 tsp pani puri masala (readily available at Indian supermarkets); 1 tbsp tamarind pulp (you can buy this, or make your own); 5 dates, pitted; ½ tsp cumin seeds, roasted; 170 g/6 oz/1 cup brown sugar; 25 mint leaves; 30-32 crisp fried puris (readily available at Indian supermarkets); 1 tbsp chopped cilantro/coriander leaves; ½ tsp salt; 140 g/5 oz/½ cup tamarind pulp; ½ tsp chili powder; 1 tsp cumin seeds, ground; 250 ml/8 fl oz/1 cup water
