Spiced Potato Medallions

Say goodbye to boring French fries – this is an excellent potato alternative. My mom made this potato curry dish for me and my brother when we were kids, and we loved it so much we ate it straight from the pan. Every time I make it now, I think of my brother, who I miss so much. He passed away too soon but left me with many wonderful memories. I dedicate this recipe to him.
