Chicken Nachos

When I first made these chicken nachos for my kids’ friends, I was pleasantly surprised to learn – from a mother who had been driving them – that they were raving about them. It was then that I realized my dish had become a popular topic of conversation among the kids at school. So this recipe is a tribute to my kids’ wonderful friends, who appreciate and admire my cooking, Thank you, middle schoolers!
