This deeply delicious (and added-fat-free!) steamed dish truly is a breath of fresh air. It uses an incredible combination of ingredients such as Thai basil and garlic, and the delicate texture of the fish is preserved as it gently steams, absorbing all the flavours resulting in an outstanding dish that takes no longer than 10 minutes to make. The genius behind the dish is my darling husband, so he deserves full credit here. I have offered Swiss chard leaves as an alternative if you cannot
