Great recipes are often made by chance and here is the best example of one. Using the items from my pantry and fridge one evening when guests dropped by, I started layering the flavours, using my ‘tasting mind’. Here is a kesari murghi. Saffron, delicately mixed in creamy yogurt, aromatic curry leaves, and fried caramelised onions to thicken the gravy. Served with warm rotli or naan this dish continues to be a favourite among the many who have tried it.
