Yogurt or dahi, is made from cow/buffalo milk and a bit of actual yogurt which is the starter for this process. I recall my grandmother making a fresh bowl every morning and also clearly remember her removing a spoonful or two (to be used for the next day’s preparation) before serving it at the table. This reserved yogurt is referred to as the ‘jumun’ or the binder. Eating dahi with lunch was a routine at their table and never an option. Healthy for the stomach lining a
