Growing up, I often visited Syria with my father. My favorite part of these trips was the day we’d go for shawarma at the very top of a hill somewhere in Damascus.
I was probably seven or eight years old when we stopped visiting, due to the political turmoil in the region, but Syrian shawarma will always be my favorite of the Levantine varieties—it’s simple and perfectly balanced with aromatic, spiced chicken, toum (garlic spread), and tart Arabic pickles in a super-thin wheat wrap.
