Ginger Lime Spritz

Stoney’s Tangawizi, a spicy ginger beer popular throughout East Africa, inspired this refreshing ginger soda made with lots of fresh ginger root (use organic for an even better, spice-forward flavor), plenty of fresh lime juice to tame the heat, and a good amount of salt for complexity. Let the crushed ginger steep in the syrup the full fifteen minutes to allow the residual heat to continue to extract its flavor.
