A piquant, fruity salsa that is good as a topping for bruschetta, served with roasted or barbecued vegetables, or as an accompaniment to the Goats’ Cheese Pancakes.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 5 garlic cloves, finely chopped

Method

  1. Heat the oil in a saucepan over a medium heat. Add the onion and fry for 10 minutes until softened and starting to colour, then add the garlic and cook for another 2 minutes. Stir in the vinegar, orange juice and sugar, then turn the heat down to low and simmer for 25 minutes, stirring occasionally, until the liquid has reduced and become syrupy.
