This salsa crops up a fair bit in this book — I find it a great and easy way to add flavour, texture and interest to all sorts of dishes.


  • 4 large vine-ripened tomatoes, deseeded and diced
  • ¼ red onion, diced
  • 2 heaped tbsp bottled jala


  1. Mix together all the ingredients for the salsa in a bowl. Season with salt and pepper and serve at room temperature.
