A bag of frozen edamame/soya beans makes a useful freezer standby for adding to stir-fries, soups or salads, or puréed — as here — to make a dip. Instead of adding wasabi, you can alter the flavourings to make a Moroccan-style hummus by adding a little harissa and extra tahini, ground coriander and cumin. In keeping with the Asian feel, the hummus comes with wonton crisps.
