I prefer to roughly mash the kidney beans to give a chunky texture to the bean burgers. You could use a stick blender or food processor for a smoother end result, although bear in mind that tinned beans are softer in texture than dried. The chipotle paste, made from smoked jalapeño chillies, is a favourite and adds a rich, smoky, spicy kick.
