Capers aren’t to everyone’s taste, but you may change your mind when you try them fried until crisp and light golden. They add a salty hit of flavour and crunch, and in perfect contrast to the creamy mildness of the carbonara sauce.

Ingredients

  • 400 g /14 oz dried linguine
  • 1 tbsp olive oil

Method

  1. Bring a large pan of salted water to the boil and cook the pasta following the pack instructions.
  2. Meanwhile, heat the oil in a large, deep frying pan/skillet over a medium heat. Add the capers, turn the heat down slightly and fry for 3—4 minutes, turning occasionally, until golden and crisp, then drain on kitchen paper. Add the butter to the pan and when melted, s
