Homemade pesto takes a matter of minutes to make and can be so much more than the classic basil version. This pesto uses a mixture of fresh summer herbs, but you could vary it depending on the time of year. Pine nuts can be expensive, so try almonds, cashews, walnuts or Brazils, for a sweet, nutty creaminess. Spinach, kale, courgette, chard or broccoli are also delicious instead of the asparagus.
