The nutty flavour of sesame seeds is greatly enhanced by lightly toasting them in a dry frying pan/skillet until they are just golden. Here, the seeds are combined with toasted flakes of nori and folded into sticky sushi rice to make Japanese-style patties, and then topped with some mustardy greens, thin strips of omelette and a sprinkling of peppery radish sprouts.
