This is a hybrid of my children’s two favourite things — pizza and frittata — and makes a simple midweek meal when served with a mixed salad. Feel free to add your own favourite toppings or whatever you have to hand — it’s a great way to use up leftover cheese, vegetables, olives, capers or anything else you choose. You need a heavy-based 22cm/8½in non-stick pan with an ovenproof handle.
