These are based on the traditional Greek Easter pie, which are filled with leafy greens and celebrate the arrival of spring. As a twist, and in keeping with the Easter theme, there is an egg in the centre of each pie. You could use a deep muffin tin to cook the pies if you don’t have pudding basins.


  • 60 g / oz butter, melted

  1. Preheat the oven to 190°C/375°F/Gas 5 and brush four deep metal pudding basins (about 200 ml/7
