This is based on the South Indian lentil curry, sambar, and features cubes of the mild-tasting, fresh Indian cheese, paneer. It’s also good with the addition of veg — try adding cauliflower, beans, peas or spinach.

Ingredients

  • 90 g / oz/ cup dried split red lentils, rinsed well

  1. Put the lentils in a pan and cover generously with water. Bring to the boil, then turn the heat down and simmer, part-covered, for 12—15 minutes until tender. Drain and leave to one side.
