This makes a summery light meal or starter. Frozen peas are a great asset in the thrifty kitchen — not only are they economical to buy, they’re very versatile. Here, peas are combined with chopped mint and stirred into a lemony feta cheese mixture to make a great topping for toasted bread.

Ingredients

  • 175 g /6 oz/1⅓ cups frozen peas

Method

  1. Cook the peas in a pan of boiling water for 3—4 minutes until tender, then drain and refresh under cold running water. Roughly mash the peas with the back of a fork. Stir in half of the mint.
  2. While the peas are cooking, roughly mash the feta with the back of a fork. Beat in the lemon zest, milk and olive oil, then season with salt and pepper. Take care when adding
