A jar of harissa goes a long way in the kitchen — it can be spooned into mayo to make a quick sauce, brushed over roasted vegetables and stirred into couscous or, as here, used as the base of a quick marinade. The mushroom burgers come topped with a slice of golden grilled halloumi and a spoonful of red pepper and cumin dressing.

Ingredients

  • 3 tbsp extra virgin olive oil
  • 3 tsp harissa paste
  • 1 tsp

  1. Mix together the olive oil, harissa and lemon juice and season with salt and pepper. Brush the marinade generously over both sides of each mushroom and leave to marinate for 30 minutes.
