Nori has both a minerality and a toasted warmth that can elegantly round out the flavor of fish. Combine it with some fried shallots and cultured butter (regular salted butter will also be fantastic), and you have a spread that’s tangy, salty, and delightfully oceanic. This would be a great compound butter to use for basting a delicate fresh fish in a pan, but it’s also the perfect complement for a snack of sourdough and sardines packed in olive oil.
