Celery is a wildly underrated vegetable. A hardy bunch of celery will hold up in the refrigerator for a solid 2 weeks, lending its flavor, along the way, to pots of stock, mirepoix, Bloody Marys, and, of course, tuna sandwiches. And when your tinned fish plate needs something green, about 5 minutes of slicing and whisking will give you a refined celery slaw that’s a perfect match for smoked sardines, ventresca (tuna belly), octopus, or whatever tin you’re popping open.
