Gildas are a quintessential Basque pintxo, a salty, dainty drinking snack. These little skewers combine anchovies, olives, and pickled peppers into a single explosively briny bite, which will be very welcome between sips of an afternoon beer or vermouth.

In Spain, boquerónes, lightly salted anchovies marinated in vinegar, are often used for gildas, but I love the deep umami quality of canned anchovies in olive oil, especially when paired with the acidity and spice of piparra peppers
