Radicchio is bracingly bitter and admirably hardy, which means two things: It can tolerate the intense heat of a grill, and it can stand up to a creamy, salty dressing. I love grilling radicchio because it softens those tougher outer leaves ever so slightly, and the char flavor plays perfectly with the bitterness, but you can also give it a quick roast in the oven. This salad would be a great, unexpected side to serve with grilled steak or chicken quarters.
