Use for: making quick pickles with about 400 g (14 oz) of vegetables. Keeps for: 10 days.
Combine all the ingredients in a small saucepan and bring to the boil on a medium heat.
Put your choice of vegetables (cauliflower, carrot, cucumber…) in a zip-lock bag with the pickling liquid. Squeeze out the air and seal. Let the vegetables marinate for at least 1 hour.
