  • ½ cucumber
  • 1 teaspoon coarse salt
  • 1 carrot

Method

Cut the cucumber into bite-sized triangular chunks and place in a bowl. Combine with the salt and leave for 10 minutes to draw out the liquid. Cut the carrot into similar-sized pieces and add to the bowl. Combine the pickling liquid ingredients in a glass or ceramic container, then add the cucumber and carrot.
