Break the eggs into a bowl. Add the dashi, sugar and soy sauce and combine well. Heat a little oil in a medium-sized frying pan (about 22 cm/8½ in diameter). Remove any excess oil with paper towel, making sure the whole surface of the frying pan is evenly coated with oil.
