Combine the citrus juice with the soy sauce in a small bowl to make a sauce. Set aside.
Clean the shiitakes by brushing gently (you should never wash them), then remove the stems. Heat a chargrill pan or frying pan on a low heat. Place the shiitakes in the pan, gill side upwards, and cook for 7 minutes, without turning them.
Arrange the grilled shiitakes on a plate and sprinkle
