It’s remarkable how much flavor a sauce with few ingredients can have. It’s all about the tomatoes, and I find vine-ripened cherry, pear, and grape tomatoes offer giant bursts of flavor in small morsels. For a nice chunky texture, keep the smallest tomatoes whole.
Heat oil in a large skillet over medium-low heat. Add garlic and red pepper flakes; cook, stirring constantly, for 5 minutes. Do not allow garlic to over-brown.
Add tomatoes and salt. Cook, stirring constantly, for 5 minutes or until tomatoes are tender and mixture is saucy. Remove from heat; stir in pepper and basil.
Serve over pasta and sprinkle each serving with cheese.
