Toss this zesty blend on salads. For parties, serve with wooden picks on the side or arrange on mini skewers with fresh basil leaves. Keep small, bite-size tomatoes whole, but cut anything larger than a quarter in half.
Combine oil, vinegar, honey, shallot, garlic, basil, parsley, salt, and zest in a large bowl.
Stir in tomatoes and mozzarella. Cover and chill for several hours; serve within 3 days.
