Tomatoes and black-eyed peas pair well together. Peak tomato season is summer, and I’m not fond of heating up the kitchen cooking dried peas, so I go for canned. What makes this dish so wonderful—aside from its bright, fresh flavor—is its adaptability. Swap out your favorite bean or other cooked vegetable for the black-eyed peas—try black beans, garbanzo beans, or even corn kernels.
