This is a riff on West Indies Salad—a simple crab-and-onion dish that usually contains a bit of ice water. The tomatoes and onions will water out a bit, so I find there’s no need to dilute the vinaigrette. I encourage using sweet onions that are mild and easy to eat raw. You can use yellow or white onions, but I suggest soaking them in ice water for 15 minutes to remove some of the harsh bite.
