If you don’t mention it, no one will guess that this sweet and spiced dessert was not made from apples! It makes a great transition dessert from summer to fall when you’ve still got green tomatoes but frosts have taken down the vines.
Combine sugar, brown sugar, flour, cinnamon, cloves, salt, and zest in a large bowl. Add tomatoes and raisins, tossing to coat.
Fit one crust in bottom of a 9-inch pie plate. Cut remaining pastry into 1-inch strips.
