Kelaguens are chopped meat or seafood salads or relishes, vividly alive with the bite of hot chili peppers and the tartness of lemon juice. Fiesta food on Guam is not considered complete without at least one or two of these spicy side dishes.

This dish, Kelaguen Uhang, is traditionally made with freshly-grated coconut meat. Failing that, dried, unsweetened coconut flakes may be used.
