Purple Taro Salad

Purple taro is becoming popular in Hawai’i and should be available on the main-land by the time you read this. Taro itself makes one of my favorite variations on potato salad but purple taro makes this dish a show stopper. (If you cannot locate the purple variety, petition your local greengrocer to order it.) Ordinary or true taro may be substituted but, of course, it will lack the visual impact of this recipe from Yap in Western Micronesia.
