While I would like to think I have eaten every version of kelaguen in the culinary lexicon of Guam, this was the first. And, we know, first loves are most precious. The occasion was a christening feast shortly after I first arrived on the island in 1981. Its assertive flavor can still seduce me.

Ingredients

  • 4 whole chicken breasts, skinned, cooked and boned
  • 1 small onion, peeled and finely chopped
  • the juice of 6 fresh

Method

  1. Finely chop the chicken and place it in a large, non-reactive mixing bowl. Add all the remaining ingredients and thoroughly combine.
  2. Transfer to a serving bowl and present at once or refrigerate until ready to serve.
