This hallmark marinated seafood salad—a cousin to the Latin American Ceviche—is repeated throughout the islands of the South Pacific, from Vanuatu and Fiji, through Tonga and Samoa, the Cook Islands to Tahiti in French Polynesia, and to the Marquesas and Tuamotus farther east. Many claim it as their own; specifically the Fijians, as Kokoda, and the Tahitians, their signature Poisson Crû. The fundamentals of the dish are almost universal—the difference lies in the detail
