This basic recipe is repeated—with different local names—throughout many island groups in the Central Pacific, including Fiji. The coconut cream filling (Miti or niu) is traditionally wrapped in young taro leaves to form the little, individual packets. These are then further wrapped in banana leaves and tied with slender leaf ribs or string before being placed in the top layer of an earth oven.
