Poi is merely a mixture of cooked, pounded or mashed taro corms and water, prepared to the consistency of a creamy purée or soft paste. The terms “one-finger” or “two-finger” refer to its consistency: one-finger sufficient to scoop out a respectable mouthful, two-finger a more liquid product.
