Coconut Rice

This Coconut Rice differs only slightly from the classic recipe. Yes, it has the rich coconut signature but, also, an almost indefinable overtone that hints of pots of rice being cooked over open smoky fires of coconut husks in a forest clearing somewhere in the Pacific. (Because of the concentrated coconut flavor, use this Coconut Rice to accompany dishes that do not contain coconut milk as an ingredient.)
